Role Overview
We are looking for a commercially driven F&B leader to own end-to-end food & beverage
revenue and profitability across our hotel portfolio. This role will be responsible for pricing,
product mix, digital growth, go-to-market strategy, and performance management across all
F&B revenue streams.
The role goes beyond in-house restaurants and covers dine-in, online ordering & delivery
platforms, banquets & MICE, outdoor catering, promotions, and local activations. The individual
will play a key role in shaping what we sell, where we sell, how we price, and how we scale F&B
profitably.This is a hands-on role for someone who thinks like an operator, understands P&Ls deeply, anduses data, customer insights, and experimentation to drive growth.
Key Responsibilities
- Commercial & Pricing Ownership
- Own overall F&B revenue and contribution margins across all channels
- Define pricing strategy for menus, combos, packages, and services considering food cost,
- demand patterns, competition, and guest segments
- Drive margin optimization through pricing, portion control, menu engineering, and bundle
- design
- Work closely with procurement, finance, and operations to control food costs and improve unit economics
- Design differentiated pricing strategies for dine-in, room service, corporate clients, long-stay
- guests, online delivery, banquets, and catering
- Digital Growth & Demand Generation
- Own performance and growth on online ordering and delivery platforms (aggregators and direct channels)
- Drive visibility and conversion through Google My Business optimization, ratings & reviews,
- menu visibility, and local SEO
- Partner with marketing teams on performance marketing, promotions, offers, and campaigns to drive F&B demand
- Plan and execute local activations, on-ground promotions, and partnerships to increase footfall and local relevance
- Revenue Streams Expansion
- Drive growth across multiple F&B revenue streams including:
- In-house restaurants and dine-in
- Online ordering and delivery
- Banquets & MICE
- Outdoor catering and bulk orders
- Corporate and long-stay meal programs
- Identify opportunities to launch new offerings, formats, or packages based on guest needs and hotel demand patterns
- Sales & Go-to-Market Strategy
- Identify and prioritize target customer segments (business travelers, families, corporate clients,
- long-stay guests, local customers, etc.)
- Define channel-wise and day-part strategies (breakfast, lunch, dinner, events)
- Work closely with sales teams to enable banquet, corporate, and group F&B revenue
- Translate strategy into clear playbooks for hotel teams to execute consistently
- Performance Tracking & Insights
- Track and analyze key metrics such as F&B revenue, channel-wise performance, item-level
margins, and promotion ROI
- Use data, guest feedback, and market insights to continuously refine menus, pricing, and offers
- Build dashboards and reports to support leadership decision-making and rapid course correction
- Cross-Functional Collaboration
- Work closely with chefs, operations, procurement, finance, sales, and marketing teams
- Ensure alignment between commercial strategy and on-ground execution across hotels
- Act as the single point of ownership for F&B commercial outcomes
Experience & Skills Must-Have
- 4–10 years of experience in F&B commercial strategy, revenue management, pricing, category
- management, or growth roles
- Experience across restaurants, hotel chains, QSR, food-tech, or food retail environments
- Strong exposure to menu pricing, bundle design, promotions, and margin management
- Hands-on experience working with digital channels such as online ordering platforms,
- aggregators, or performance-led promotions
- Strong commercial mindset with comfort around numbers, data, and P&L ownership
Good-to-Have
- Experience managing multiple outlets, hotels, or locations
- Exposure to banquet, MICE, catering, or corporate F&B revenue streams
- Ability to work with data tools (Excel / Sheets / dashboards)
- Experience scaling standardized F&B playbooks across locations
