Fieno is an upcoming traditional Italian fine‑dining restaurant located in Colaba, Mumbai. The concept is rooted in authentic Italian cuisine, refined European service standards, and personalized guest engagement, offering a calm, elegant, and premium dining experience.

Position Overview

The Guest Services Supervisor (GSS) is a hands‑on service professional responsible for complete ownership of assigned tables, including order taking, food & beverage service, wine service, clearance, and guest engagement.

This is not a supervisory role over stewards—the GSS independently manages the entire service cycle for their tables, ensuring seamless, personalized, and polished service.

Key ResponsibilitiesEnd‑to‑End Table Service
  • Take full ownership of assigned tables from guest arrival to departure
  • Personally manage:
  • Table setup and presentation
  • Order explanation and recommendations
  • Food and beverage service
  • Wine presentation, opening, and service
  • Table clearance, crumbing, and reset
  • Maintain natural pacing of courses in coordination with the kitchen
Guest Experience & Engagement
  • Welcome guests warmly and establish rapport
  • Understand guest preferences and dining expectations
  • Confidently handle special requests and dietary requirements
  • Resolve guest concerns independently, professionally, and discreetly
  • Ensure guests receive a personalized, European‑style fine‑dining experience
Food & Wine Knowledge
  • Demonstrate strong understanding of traditional Italian cuisine, ingredients, and regional styles
  • Confidently explain menu items, preparation techniques, and chef specials
  • Recommend Italian wines, pairings, and aperitifs/digestifs
  • Execute correct wine service protocol, including glassware selection and decanting where required
Operational Excellence
  • Coordinate directly with kitchen and bar for accurate and timely service
  • Ensure adherence to service SOPs, hygiene, and safety standards
  • Maintain impeccable grooming, posture, and professional demeanor
  • Assist with opening, closing, and mise‑en‑place responsibilities
  • Support management with guest feedback and service observations
Candidate ProfileExperience
  • 4–5 years of experience in fine‑dining or luxury hospitality
  • International work experience preferred (Europe, Middle East, luxury cruise lines)
  • 5‑star hotel or high‑end independent restaurant background strongly preferred
Core Skills & Attributes
  • Comfortable handling single‑handed table service without support staff
  • Excellent command over Italian cuisine and wine service
  • Strong communication and interpersonal skills
  • Calm, composed, and guest‑focused under pressure
  • High attention to detail and service finesse
  • Passion for hospitality and classic dining traditions
Education
  • Degree or Diploma in Hotel Management / Hospitality preferred
