Mabon Chocolates is a Gurgaon-based premium bean-to-bar chocolate manufacturer, specializing in artisan chocolates made from organic South Indian cocoa nibs without any preservatives or emulsifiers. We offer customized flavors and a diverse range of gifting options for corporate events, weddings, and other special occasions. Currently, we are in the process of launching a retail store and finalizing our website and food aggregator registrations. At Mabon Chocolates, we are committed to creating high-quality, handcrafted chocolate experiences that delight our customers.

Role Description

This is a full-time on-site role for a Head Chef at Mabon Chocolates, located in Gurgaon. The Head Chef will oversee the production of artisanal pastry and chocolates, curate new recipes, and ensure high standards of taste and quality. Responsibilities include sourcing top-quality ingredients, leading and training the kitchen team, managing kitchen operations, and maintaining consistency in all chocolate creations. Additionally, the role will involve collaboration with other departments for product ideation and contributing to the overall success of the brand.

Qualifications

Kitchen Leadership & Operations:

Lead and manage the kitchen team across pastry and chocolate divisions.

Assign daily production tasks and ensure smooth workflow during all shifts.

Create and maintain production schedules to meet demand across caf, retail, and online channels.

Enforce hygiene, sanitation, and food safety standards (FSSAI compliance).

Pastry Production:

Oversee the preparation of all pastries, viennoiseries, desserts, and baked goods.

Develop and refine recipes aligned with the Mabon brand's quality standards.

Ensure consistency in taste, appearance, and portioning.

Troubleshoot baking issues and maintain high product quality.

Chocolate & Confectionery (Added Advantage)

Support chocolate production when needed (tempering, molding, enrobing, fillings).

Assist in R&D for new pastry and chocolate-based items, seasonal products, and caf specials.

Quality Control:

Conduct routine checks on product quality, ingredients, and kitchen equipment.

Maintain high standards of presentation and ensure adherence to SOPs.

Team Training & Development:

Train junior chefs and kitchen staff in pastry techniques and production processes.

Build a culture of discipline, creativity, and continuous improvement.

Inventory & Costing:

Monitor raw material usage and coordinate with procurement for stock replenishment.

Help with recipe costing, wastage control, and kitchen efficiency.

Required Qualifications:

Minimum 35 years of experience in a professional pastry kitchen (hotel, bakery, caf, or ptisserie).

Strong foundation in pastry arts: cakes, tarts, viennoiseries, desserts, and baked products.

Experience with chocolate is a plus.

Ability to manage a team and handle fast-paced production environments.

Strong organizational and communication skills.

Knowledge of food safety and kitchen management standards.
