Job Description

CÉ LA VI Mumbai is seeking a visionary and passionate Head Chef to lead our culinary team and deliver an exceptional Southeast Asian dining experience that reflects our brand's innovation and excellence.

Head Chef Responsibilities:

  • Develop and manage kitchen budgets in collaboration with management.
  • Monitor and control food costs, wastage, and inventory to achieve financial targets.
  • Ensure cost-effective sourcing while maintaining premium quality standards.
  • Forecast food requirements and optimise purchasing strategies to minimise variance.
  • Deliver an exceptional dining experience by ensuring consistent food quality, presentation, and taste.
  • Maintain authenticity and innovation in menu offerings aligned with the CÉ LA VI brand.
  • Address guest feedback proactively to enhance satisfaction and loyalty.
  • Collaborate with the management team on special promotions, culinary events, and seasonal menus.
  • Oversee all kitchen operations including preparation, cooking, plating, and service coordination.
  • Implement and enforce food safety, hygiene, and sanitation standards in compliance with local regulations.
  • Conduct regular food tastings, inspections, and quality reviews.
  • Coordinate scheduling, staffing, and daily briefings to ensure smooth operations.
  • Drive continuous improvement and efficiency in kitchen processes.
  • Mentor, train, and motivate kitchen staff to uphold CÉ LA VI's culinary standards.
  • Promote teamwork, discipline, and accountability within the culinary team.
  • Foster creativity and innovation through ongoing development and knowledge sharing.
  • Stay current with culinary trends and techniques to continuously elevate the menu and team capability.

Required Skills and Qualifications:

  • Proven experience as a Head Chef or Senior Sous Chef within a high-end hospitality or F&B environment.
  • Strong expertise in Southeast Asian cuisine with a passion for authenticity and innovation.
  • Demonstrated ability to manage kitchen operations, budgets, and cost control effectively.
  • Exceptional leadership and team development skills with the ability to inspire high-performing teams.
  • Strong understanding of food safety, hygiene standards, and regulatory compliance.
  • Ability to thrive in a fast-paced, high-pressure environment while maintaining attention to detail.
  • Creative mindset with a commitment to delivering unique and memorable dining experiences.
  • Flexibility to work evenings, weekends, and public holidays as required.
