Your Role at a Glance:
As Executive Sous Chef, you will be the operational backbone of the culinary division, ensuring seamless execution across all kitchens. You will partner closely with the Executive Chef to drive innovation, consistency, and excellence while maintaining the highest standards of quality, hygiene, and efficiency.
Your leadership will be instrumental in mentoring a diverse culinary team, enhancing operational performance, and delivering elevated dining experiences that reflect the hotel's iconic stature.
What You'll Do:
- Support the Executive Chef in overseeing all culinary operations across restaurants, banquets, and in-room dining.
- Drive consistency, quality, and presentation standards across all kitchen outputs in line with brand expectations.
- Collaborate with Chef Tournant & Chef De Cuisines to conceptualize, develop, and execute innovative menus across multiple cuisines.
- Lead kitchen operations planning based on occupancy forecasts, event requirements, and seasonal trends.
- Ensure effective cost control through menu engineering, portion standardization, and waste management.
- Monitor food production processes to maintain optimal efficiency, productivity, and profitability.
- Uphold stringent hygiene and food safety standards in compliance with HACCP, FSSAI, and internal audit protocols.
- Oversee procurement, inventory management, and storage practices to ensure quality and cost optimization.
- Conduct regular quality audits, tastings, and process reviews to ensure consistency and excellence.
- Mentor, train, and develop the culinary brigade, fostering a culture of discipline, creativity, and continuous learning.
- Support performance management, succession planning, and talent development initiatives within the kitchen team.
- Contribute to strategic planning for restaurants operations, menu engineering, and culinary excellence initiatives.
- Coordinate closely with Food & Beverage, Stewarding, and Engineering teams to ensure seamless operations.
- Lead execution of high-profile events, VIP dining experiences, and large-scale banquets with precision and flair.
- Drive sustainability initiatives, including responsible sourcing and waste reduction practices.
Who You Are:
- A seasoned culinary professional with 10 to 15 yrs of experience in luxury hotels, including significant exposure as Executive Sous Chef.
- Proven expertise in managing multi-cuisine operations across high-volume and fine-dining environments.
- A strong leader with the ability to inspire, mentor, and manage large, diverse kitchen teams.
- Deep understanding of culinary techniques, global food trends, and modern presentation styles.
- Commercially astute with hands-on experience in cost control, menu engineering, and operational budgeting.
- Highly organized, detail-oriented, and capable of performing under pressure in a dynamic luxury environment.
- Exceptional interpersonal and coordination skills, with a collaborative leadership approach.
- A passion for excellence, innovation, and delivering consistently elevated guest experiences.
