Key Responsibilities
- Manage day-to-day operations of the patisserie section
- Prepare and plate a wide range of high-quality pastries, desserts, and baked goods
- Ensure consistency in presentation, flavour, and portioning
- Assist in the creation of new seasonal menus and development of signature desserts
- Supervise and guide junior team members and interns
- Maintain hygiene, food safety, and kitchen discipline as per HACCP standards
- Manage inventory and ordering of pastry-specific ingredients
- Ensure mise en place is complete before service
Requirements
- Formal culinary education or pastry diploma (preferred but not mandatory if highly skilled)
- Minimum 3 years experience in a similar role, preferably in a high-end caf, patisserie, or fine dining restaurant
- Strong foundation in French pastry techniques: mousses, tarts, entremets, laminated doughs, meringues, glazes, etc.
- Knowledge of baking, fermentation, and dessert plating
- Attention to detail, creativity, and ability to work under pressure
- Team player with leadership skills and a positive attitude
- Passion for innovation and continuous learning
