Sous Chef – Bakery & Pastry – FIENO, Colaba

FIENO, Churchgate Hospitality's new Italian restaurant in Colaba, Mumbai, is building a bakery and pastry program rooted in authenticity, finesse, and ingredientdriven craftsmanship. We are hiring a Sous Chef – Bakery & Pastry with strong experience in Italian bakes, artisanal breads, and refined desserts.

Role Overview

The Sous Chef – Bakery & Pastry will support the Head Pastry Chef in developing and executing FIENO's bread program, dessert menu, and signature Italian baked goods. This role requires technical mastery, creativity, and the ability to lead a team while maintaining consistency and quality.

Key Responsibilities
  • Produce and oversee daily preparation of Italian breads such as focaccia, ciabatta, sourdough, grissini, and specialty loaves.
  • Execute and refine Italian pastries and desserts including tiramisu, panna cotta, crostate, biscotti, bomboloni, semifreddo, and seasonal specials.
  • Develop new recipes aligned with FIENO's culinary philosophy and seasonal ingredients.
  • Maintain high standards of miseenplace, portioning, baking accuracy, and presentation.
  • Train and supervise junior pastry cooks and commis in techniques, hygiene, and workflow.
  • Coordinate with the culinary team to ensure timely production for service, events, and special menus.
  • Manage inventory, ordering, and storage of bakery and pastry ingredients.
  • Ensure compliance with food safety, sanitation, and kitchen SOPs.
  • Support menu engineering, costing, and quality control for all bakery and pastry items.
Candidate Profile
  • Experience in premium standalone restaurants, boutique bakeries, or 5star hotels with a focus on bakery and pastry.
  • Strong technical knowledge of Italian baking techniques, fermentation, dough handling, lamination, and classic Italian desserts.
  • Creative mindset with the ability to balance tradition and modern presentation.
  • Leadership skills with the ability to guide and motivate a small team.
  • Strong organisational discipline and attention to detail.
  • Passion for Italian cuisine, artisanal craftsmanship, and flavourdriven pastry work.
