Job Description

A Tandoor Commis I (or Commis 1) isa specialized, experienced kitchen role responsible for operating the tandoor oven, preparing naans, kebabs, and tandoori dishes, and ensuring high hygiene standards. They work under senior chefs to manage the tandoor station, maintain stock levels, and deliver consistent quality in a fast-paced environment.

Key Responsibilities

  • Tandoor Operations:Preparing, marinating, and cooking various tandoori items (chicken, kebabs, fish, vegetarian) and flatbreads (naan, roti, kulcha) in a tandoor oven.
  • Food Preparation:Handling mise-en-place (prep work) for the Tandoor section, including marination and portion control.
  • Quality Control:Ensuring all dishes match the hotel or restaurant's recipe, taste, and presentation standards.
  • Hygiene & Safety:Maintaining a clean tandoor area, adhering to food safety standards (HACCP), and ensuring safe storage.
  • Inventory Management:Monitoring inventory of tandoor supplies, controlling food wastage, and assisting with stock ordering.
  • Team Collaboration:Supporting senior chefs, assisting other kitchen sections during busy service hours, and training junior staff.

Qualifications and Skills

  • Experience:Proven experience (often 13 years) in a similar role in a reputed Indian restaurant or hotel.
