Job Summary
We are looking for an experienced Sous Chef with strong knowledge of Continental cuisine and hands-on expertise in Peruvian and Latin American dishes. The candidate will be responsible for managing kitchen operations, ensuring high-quality food preparation, and maintaining consistency in taste, presentation, and hygiene standards.
Key Responsibilities
- Manage daily kitchen operations and ensure smooth workflow
- Prepare and supervise the preparation of Continental, Peruvian, and Latin dishes
- Ensure consistency in food taste, quality, and presentation
- Develop and suggest new menu items based on Peruvian and Latin cuisine trends
- Monitor portion control and reduce food wastage
- Ensure all dishes are prepared as per standard recipes and SOPs
- Maintain hygiene, cleanliness, and food safety standards at all times
- Train and guide junior kitchen staff and commis chefs
- Manage kitchen inventory, stock levels, and ingredient ordering
- Ensure proper storage and handling of all food items
- Coordinate with the service team for efficient operations
- Handle kitchen responsibilities independently during service hours
- Maintain discipline and teamwork within the kitchen
Requirements
- 7-8 years of experience in a similar role
- Strong experience in Continental cuisine with knowledge of Peruvian & Latin dishes
- Good understanding of international cooking techniques and ingredients
- Ability to work in a fast-paced kitchen environment
- Strong leadership and team management skills
- Knowledge of food safety and hygiene standards
- Flexibility to work in shifts, weekends, and holidays

- Experience in fine dining or premium restaurant setups
- Creativity in menu planning and presentation
- Strong communication and coordination skills
