Job Description

Job Title: Quality Manager

Department: Quality Assurance / Quality Control

Industry: Food Processing (Biscuit Manufacturing)

Job Summary

The Quality Manager is responsible for ensuring that all biscuit products meet food safety,

quality standards, and regulatory requirements. This role oversees quality control processes

from raw material inspection to finished product testing, ensuring consistent product quality

and compliance with food safety systems.

Key Responsibilities

1. Quality Assurance & Control

Develop and implement quality standards for biscuit production

Monitor quality at all stages:

o Raw materials (flour, sugar, fats, additives)

o In-process production (mixing, baking, cooling)

o Finished products

Ensure consistency in taste, texture, color, and packaging

2. Food Safety Compliance

Ensure compliance with food safety standards such as:

o FSSAI regulations

o ISO 22000

o HACCP

Maintain hygiene and sanitation standards in the factory

3. Laboratory Testing & Inspection

Supervise lab testing of raw materials and finished biscuits

Conduct tests for:

o Moisture content

o Shelf life

o Microbiological safety

Approve or reject materials/products based on results

4. Process Improvement

Identify quality issues and implement corrective actions

Reduce wastage and defects in production

Work with production team to improve efficiency without compromising quality

5. Documentation & Audits

Maintain quality records and documentation

Prepare for internal and external audits

Handle customer and regulatory inspections

Ensure traceability of batches

6. Team Management

Lead and train quality control staff

Conduct regular training on hygiene and quality practices

Monitor team performance and ensure adherence to SOPs

7. Supplier Quality Management

Evaluate and approve raw material suppliers

Conduct supplier audits

Ensure incoming materials meet required standards

8. Customer Complaint Handling

Investigate product complaints

Perform root cause analysis

Implement corrective and preventive actions (CAPA)

Required Skills

Strong knowledge of food quality and safety systems

Analytical and problem-solving skills

Leadership and team management

Attention to detail

Good documentation and reporting skills

Educational Qualification

Bachelor's/Master's degree in:

o Food Technology

o Food Science

o Microbiology

o Chemistry or related field

Experience

8–13 years in food manufacturing

Experience in FMCG or biscuit industry preferred

Prior experience in handling audits and certifications

Key Performance Indicators (KPIs)

Product quality consistency

Number of customer complaints

Audit scores and compliance levels

Reduction in defects and wastage

Supplier quality performance

Work Environment

Factory-based role

Requires frequent presence on production floor

Coordination with:

o Production team

o Procurement

o R&D

o Regulatory bodies
