Job Description

Project Member – L&D

Location: Chennai

Department: Operations & Training

Role Summary

We are seeking a highly skilled and passionate Culinary & Pastry Training Manager to lead training, capability building, and operational excellence initiatives across our kitchen network. The role is responsible for ensuring consistent product quality, adherence to SOPs, and skill development of kitchen teams through structured training programs, audits, and on-ground coaching.

The ideal candidate will possess strong expertise in pastry production and cake frosting techniques, along with working knowledge of culinary operations. They should be capable of driving training interventions, maintaining brand standards, and supporting operational teams in delivering exceptional product quality across locations.

Key Responsibilities

Training & Capability Development

  • Design and conduct structured training programs for pastry and culinary teams across all locations.
  • Train team members on cake frosting techniques, finishing standards, decoration consistency, product presentation, and quality benchmarks.
  • Identify skill gaps within kitchen teams and implement corrective training plans to improve operational performance.
  • Conduct induction and refresher training sessions for new and existing employees.

Operational Excellence & Quality Control

  • Ensure strict adherence to culinary and pastry SOPs across all kitchens.
  • Monitor consistency in product execution, presentation, taste profiles, and finishing standards.
  • Conduct regular quality audits and provide actionable feedback to kitchen teams.

Team Leadership & Engagement

  • Guide, mentor, and motivate kitchen teams to achieve operational and quality objectives.
  • Foster a culture of continuous learning and performance improvement.
  • Collaborate with Kitchen Managers and Area Operations teams to drive training effectiveness.
  • Support employee engagement initiatives aimed at improving team capability and retention.

Performance Monitoring

  • Analyze operational trends and identify opportunities for process improvements.
  • Maintain training records, compliance reports, and skill development dashboards.
  • Drive standardization and consistency across all assigned locations.

Regional Support

  • Travel extensively across assigned regions to provide hands-on training and operational support.
  • Act as the subject matter expert for pastry production, cake finishing, and product execution standards.

Qualifications & Experience

  • Bachelor's Degree/Diploma in Hotel Management, Bakery & Confectionery, Culinary Arts, or a related field.
  • 2 -5 years of relevant experience in bakery, pastry, dessert production, or QSR/F&B operations.
  • Prior experience in a training, quality assurance, or kitchen leadership role is preferred.
  • Experience managing multi-location kitchen operations will be an advantage.
