Store/Purchase Manager Loco Otro

About the Job

PURPOSE This position is responsible for managing end-to-end procurement and inventory operations for Loco Otro, ensuring the timely availability of quality ingredients, raw materials, and supplies to support seamless restaurant operations. The role focuses on vendor management, cost control, inventory accuracy, and compliance with food safety standards while aligning procurement with the culinary vision and business goals.

REPORTS TO Operations Manager + Sr. Sous Chef

INTERACTS WITHExternal: Vendors, Suppliers, Distributors, FSSAI Authorities, and Service Providers

Internal: Kitchen Team, Bar Team, Finance, Operations, and Front-of-House Teams

KEY RESPONSIBILITIES

Drive Operational Excellence

  • Oversee daily procurement of fresh produce, proteins, dry goods, raw materials, bar supplies and restaurant supplies
  • Ensure all items meet quality standards and are delivered on time to avoid service disruptions
  • Maintain organised storage systems adhering to FIFO/FEFO principles and FSSAI guidelines
  • Conduct regular stock audits and reconcile inventory with usage and sales data

Applied Learning

  • Stay updated on seasonal ingredients, market pricing, and supplier capabilities
  • Source specialty items and unique ingredients that align with the menu innovation
  • Introduce cost-saving measures and sustainable sourcing practices
  • Train kitchen and bar staff on proper receiving, storage, and stock rotation procedures

Vendor & Supplier Management

  • Build strong relationships with local farmers, specialty suppliers, and distributors
  • Negotiate favourable pricing, credit terms, and consistent supply agreements
  • Evaluate supplier performance on quality, reliability, pricing, and service
  • Maintain an approved vendor database and explore backup sourcing options

Business & Financial Acumen

  • Develop and manage monthly procurement budgets in coordination with Finance and Culinary teams
  • Monitor food and beverage cost percentages and identify wastage or inefficiency
  • Generate monthly reports on spend analysis, inventory turnover, and cost-saving initiatives
  • Support menu costing and pricing decisions with accurate ingredient cost data

Leadership & Collaboration

  • Work closely with the department managers to forecast requirements based on menu changes, bar trends and other events
  • Coordinate with the Operations team to plan for events, seasonal menus, and promotional periods
  • Lead purchasing policy implementation and process improvements
  • Mentor junior store staff and uphold high standards of professionalism and integrity

Compliance & Risk Management

  • Ensure all procurement complies with FSSAI regulations and Loco Otro's internal policies
  • Maintain accurate records of invoices, delivery notes, contracts, and supplier documentation for audit readiness
  • Monitor supplier certifications (FSSAI licenses, quality certifications, etc.)
  • Identify supply chain risks and implement contingency plans to avoid shortages

Health & Safety Responsibilities

  • Ensure all food and raw material deliveries meet hygiene and safety standards
  • Monitor proper storage conditions (temperature control, pest prevention, cleanliness)
  • Work with suppliers to address safety concerns and ensure compliance with food safety protocols
  • Conduct regular inspections of storage areas and equipment

Job Requirements / Hiring Profile

QUALIFICATIONS

  • Degree/Diploma in Hotel Management, Supply Chain, Business Administration, or related field (preferred)

  • WORK EXPERIENCE

    • Minimum 57 years of experience in restaurant procurement, inventory management, or F&B operations (preferred)
    • Prior experience in contemporary cuisine, or food & bar forward restaurants (preferred)
    • Strong knowledge of ingredient sourcing, vendor negotiation, and inventory systems

    SKILLS & COMPETENCIES

    • Excellent negotiation and vendor relationship management
    • Strong numerical and analytical skills for cost control and budgeting
    • Proficiency in inventory management software and MS Excel
    • Understanding of FSSAI regulations and food safety standards (preferred)
    • Ability to work in a fast-paced, detail-oriented environment
    • Strong communication and cross-functional collaboration skills
