Job Summary
The Pastry & Fondant Chef will be responsible for producing high-quality pastries, desserts, and fondant-based designer cakes for the commissary kitchen. This role involves hands-on preparation, finishing, and decoration of bakery items while maintaining consistency, hygiene, and brand standards. The chef will manage daily production, support custom cake orders, and ensure smooth coordination with outlet teams.
Roles & Responsibilities
- Prepare pastries, desserts, and cakes following standard recipes and brand quality.
- Create high-quality fondant decorations including smooth finishes, figurines, flowers, and themed designs.
- Ensure consistency in taste, texture, and presentation across all pastry and fondant products.
- Handle customised and designer cakes, ensuring structural stability and clean detailing.
- Maintain kitchen hygiene and food safety standards as per FSSAI guidelines.
- Manage inventory of baking ingredients, fondant materials, colours, and dcor tools while minimising wastage.
- Collaborate with the pastry team to meet daily production, bulk orders, and special requests on time.
- Train and guide junior staff on pastry techniques, fondant handling, and standard operating procedures.
Skills & Competencies
- Strong knowledge of pastry fundamentals and baking techniques.
- Proficiency in fondant modelling, sculpting, colouring, and finishing.
- Creative eye for detailing and design aesthetics.
- Ability to handle high-volume production while maintaining quality.
- Good communication and coordination skills.
- Time management, discipline, and ability to work under pressure.
Qualification & Experience
- Diploma/Certification in Bakery & Pastry (preferred).
- 5 years of experience in pastry or fondant work; experience in commissary kitchens is an advantage.
- Candidates with strong fondant artistry skills will be prioritised.
