Job Description: Pastry Chef

Position Summary

The Pastry Chef is responsible for the creative development, consistent production, and quality control of all pastry, bakery, dessert, and confectionery items served across the hotel's restaurants, banqueting, in-room dining, and bakery outlets. The role combines culinary craftsmanship with kitchen management, ensuring the pastry section upholds the brand's luxury standards in presentation, taste, hygiene, and cost efficiency.

Key Responsibilities

Culinary Production

  • Plan, prepare, and present a full range of pastries, cakes, desserts, breads, chocolates, and plated dessert items to 5-star quality standards.
  • Develop seasonal and signature dessert menus in coordination with the Executive Chef/Executive Pastry Chef.
  • Oversee production for à la carte dining, banquets, weddings, buffets, afternoon tea, and special events.
  • Ensure consistency in taste, texture, and visual presentation across all outlets and shifts.
  • Innovate with contemporary techniques, global trends, and plated dessert artistry while respecting classical pastry fundamentals.

Kitchen & Team Management

  • Supervise, train, and mentor pastry commis, cooks, and bakers.
  • Create and manage duty rosters, ensuring adequate coverage for peak periods and events.
  • Conduct on-the-job training to upskill junior team members in technique, hygiene, and plating standards.
  • Coordinate with the Executive Chef and other kitchen sections for menu planning and event execution.

Quality, Hygiene & Safety

  • Enforce HACCP, FSSAI, and hotel hygiene/food safety standards at all times.
  • Monitor proper storage, labeling, and rotation (FIFO) of ingredients and finished products.
  • Maintain cleanliness and organization of the pastry kitchen, equipment, and storage areas.
  • Conduct regular quality checks and tastings before service.

Cost & Inventory Control

  • Manage pastry section inventory, ordering, and stock levels to minimize wastage.
  • Monitor food cost percentages for the pastry section and recommend corrective actions.
  • Assist in menu costing and pricing for new dessert offerings.
  • Liaise with suppliers for quality ingredients and negotiate where required.

Administrative & Compliance

  • Maintain recipe standardization cards and update SOPs for the pastry section.
  • Ensure compliance with hotel policies, brand standards, and statutory food safety regulations.
  • Participate in menu engineering, tasting panels, and F&B promotions.
  • Support audits (brand, hygiene, quality) with complete documentation.

Qualifications & Experience

  • Diploma/Degree in Culinary Arts, Bakery & Confectionery, or Hotel Management.
  • Minimum 4–6 years of pastry experience, with at least 1–2 years in a similar role at a 5-star hotel or luxury F&B establishment.
  • Strong grounding in classical French pastry techniques along with modern plating and dessert trends.
  • Experience handling high-volume banqueting/event production alongside fine-dining à la carte service.
  • Exposure to international cuisine/pastry (preferred) and specialty areas such as chocolate work, sugar craft, or artisan bread is an advantage.
