We are seeking a highly experienced and creative Head Chef Pastry Kitchen to lead and scale the pastry and bakery division at the Central Kitchen of Fruit Shop on Greams Road (FSGR). This role is central to designing, standardizing, and executing high-quality desserts and bakery offerings that align with FSGR's brand vision.
Key Responsibilities:
Lead the end-to-end operations of the Pastry & Bakery section at the Central Kitchen.
Develop recipes, SOPs, and production processes for items such as cakes, tarts, mousse-based desserts, laminated doughs, cookies, and seasonal specials.
Ensure high-quality standards, hygiene, and consistency in every batch.
Work collaboratively with the Head Chef and Food Consultant to plan, test, and launch new menu items.
Train and supervise a team of junior pastry chefs and kitchen assistants.
Optimize production schedules to meet daily outlet supply needs.
Innovate in line with seasonal trends, health preferences, and customer expectations.
Maintain inventory of ingredients, forecast needs, and manage vendor coordination.
Adhere to FSSAI guidelines and internal quality control protocols.
Requirements:
Minimum 5 years of professional experience in pastry kitchens, including leadership roles in central or high-output kitchens.
Expertise in both traditional and modern pastry and baking techniques.
Experience in setting up or managing production kitchens is an added advantage.
Strong team management, communication, and training skills.
Ability to work under pressure and deliver consistently on tight timelines.
Culinary degree or diploma in Baking & Patisserie preferred.
