The Role
We are seeking a highly skilled, detail-driven Dumpling Chef to execute a modern, elevated dumpling menu with consistency and finesse. This is a hands-on role where technique, speed, and refinement must coexist.
You will be responsible for cooking premium dumplings and accompanying elements to exacting standards, within a fast-paced but controlled service environment.
Key Responsibilities
- Prepare and execute dumplings with precision
- Operate steam-based cooking systems with accuracy and timing control
- Use a mandolin safely and efficiently for fine, uniform cuts
- Develop and execute high-end, internationally inspired sauces (emulsions, reductions, infusions)
- Maintain exceptional plating and presentation standards despite a street format
- Ensure consistency across all service periods
- Uphold strict hygiene, food safety, and workstation discipline
Required Skills & Experience
- Proven experience in a high-quality kitchen or refined street food concept
- Strong knife skills, including mandolin proficiency
- Demonstrated ability in sauce development and balancing (acid, fat, heat, umami)
- Experience with steam cooking techniques (dumplings, buns, delicate proteins)
- High attention to detail and pride in craftsmanship
- Ability to perform under pressure without compromising quality
