Job Title: Night shift Head Chef - Multi-cuisine Restaurant 

Location: Arambol, Goa. 

Position type : Full-time, Night shift (8PM to 4AM)

Overview

Seeking an experienced and reliable Night Shift Chef to lead kitchen operations during evening hours in a busy multi-cuisine restaurant. The ideal candidate will prepare high quality dishes across diverse cuisines, maintain consistency and safety, and manage a small night kitchen team. 

Responsibilities 

  • Prepare and cook items from the menu quickly and efficiently across multiple cuisines.
  • Plan and create a few in house special dishes. 
  • Take feedback from guests and implement them in the cooking style. 
  • Manage food quality, portion control and timely delivery of orders during peak night hours.
  • Maintain high standards of food safety, sanitation and kitchen organisation.
  • Manage inventory usage for night shift, report shortages and assist with stock rotation.
  • Assist with nightly closing tasks: cleaning, equipment shutdown, waste management and prep for next day as required.
  • Communicate with management and property co-ordinator regarding specials, timing, and guest requests. 
  • Troubleshoot operational issues that occur during the night shift. 

Qualifications

  • Previous experience (1+ years preferred) as a chef or senior cook in multi-cuisine restaurant. 
  • Culinary diploma or relevant experience preferred.
  • Strong knowledge of cooking techniques across multiple cuisines and ability to adapt to recipes and standards quickly.
  • Familiarity with food safety regulations and kitchen hygiene practices.
  • Flexibility to work nights, weekends and holidays as needed.
  • Basic inventory management and portion-control understanding. 
  • Ability to work under pressure, multitask and prioritise during peak hours.

Desired Skills

  • Menu development and ability to create nightly specials.
  • Knife skills, butchery basics, and knowledge of plating/presentation.
  • Basic knowledge of allergen management and special-diet preparation.
  • Familiarity with commercial kitchen equipment and maintenance.
  • Cost-awareness and experience with food cost control.
