Objective: Set up our in-house Quality Lab from scratch, ensure 100% consistency in our hero products (like Thekua), and lead NPD for new traditional snacks.
What You Will Do1. Lab Setup & Quality Control (QC)
- Build the Lab: Identify, procure, and set up essential lab equipment (Moisture analyzers, pH meters, texture analyzers, etc.).
- Inward QC: Create strict specifications for all raw materials (flour, oil, ghee, spices) and test every incoming batch before it hits the kitchen.
- Outward QC: Test finished batches for moisture, texture, and rancidity before packaging.
2. Process Standardization (The Core)
- SOP Creation: Convert cook's intuition into scientific Standard Operating Procedures (Time, Temperature, Weight).
- Consistency: Ensure products (starting with Thekua) taste exactly the same every single time, regardless of who cooks them.
- Oil Management: Monitor TPC (Total Polar Compounds) and standardized frying cycles to ensure safety and taste.
3. NPD & R&D
- New Products: Develop shelf-stable recipes for new traditional snacks (Namkeen, Mathri, etc.) that match Mom's hand taste.
- Shelf Life: Solve for crispness and rancidity to extend shelf life without using harmful preservatives.
- Packaging: Work on packaging solutions that protect against moisture and breakage during Quick Commerce delivery.
Who We Need- Background: B.Tech / M.Tech in Food Technology.
- Experience: 25 years in Fried Snacks / Namkeen / Traditional Indian Sweets.
- Must-Have Skill: Experience setting up a basic QC lab and handling instrumentation.
- Mindset: You don't just sit in the lab; you are comfortable on the production floor working with chefs and staff.
