Job Summary

We are looking for a seasoned F&B Operations Manager to lead end-to-end operations for a premium casual and fine dining restaurant business in Mumbai. The role requires strong expertise in multi-outlet operations, franchise development, pre-opening projects, and bar & liquor operations, ensuring operational excellence, brand consistency, and profitable growth.

Key Responsibilities

  • Oversee and manage day-to-day operations across company-owned and franchise restaurant outlets (Casual & Fine Dine).
  • Lead franchise development support, including operational setup, SOP implementation, training, and compliance.
  • Manage pre-opening activities for new outlets: site readiness, manpower hiring, training, vendor coordination, dry runs, and launch execution.
  • Ensure high standards of food, service, bar operations, and guest experience across all locations.
  • Drive P&L ownership, budgeting, cost control, food & beverage cost optimization, and outlet profitability.
  • Oversee bar and liquor operations, including menu engineering, pricing, inventory control, excise compliance, and vendor management (preferred skill).
  • Develop and enforce SOPs for front-of-house, kitchen coordination, bar operations, and service excellence.
  • Manage manpower planning, performance reviews, leadership development, and team engagement.
  • Ensure compliance with food safety, hygiene standards, excise laws, licensing, and statutory regulations.
  • Analyze MIS, KPIs, audits, and operational metrics to improve efficiency and revenue.
  • Lead brand expansion initiatives, new market entries, and outlet stabilisation post-launch.
  • Handle escalations, guest feedback, and operational challenges to protect brand reputation.

Desired Candidate Profile

  • 10+ years of experience in F&B operations within premium casual and fine dining restaurant brands.
  • Proven experience in franchise development, franchise operations, and multi-unit management.
  • Strong hands-on exposure to pre-opening and launch of casual & fine dine restaurants.
  • Knowledge of bar and liquor operations, excise compliance, and beverage cost control is preferred.
  • Strong financial acumen with experience in P&L management.
  • Excellent leadership, communication, and stakeholder management skills.
  • Ability to work in a fast-paced, expansion-driven environment.
