Job Description

A hotel Food and Beverage (F&B) manager is a key professional responsible for planning, directing, and evaluating all aspects of dining, bar, room service, and event operations within the hotel. Their primary objective is to deliver exceptional guest experiences while maximizing sales and profitability.

Core Responsibilities-

Operations Management:

  • Oversee daily F&B activities to ensure high standards of quality, presentation, and service.
  • Ensure strict compliance with all health, safety, and hygiene regulations (such as HACCP standards).
  • Monitor guest satisfaction, proactively respond to customer needs, and resolve complaints promptly.
  • Collaborate with the executive chef on menu planning, development, and pricing, keeping up with current culinary trends.

Financial Management:

  • Manage departmental budgets, forecast revenue, and control costs (food, beverage, and labour).
  • Oversee inventory, purchasing, and stock rotation, negotiating with vendors and suppliers to ensure the best quality and prices.
  • Analyse financial reports (P&L statements, sales results) to identify areas for improvement and implement cost-saving strategies.

Staff Management:

  • Attract, recruit, hire, and train talented F&B personnel (servers, bartenders, kitchen staff, etc.).
  • Create and manage staff schedules and assignments, ensuring appropriate staffing levels for all shifts and events.
  • Lead, motivate, and mentor the team to foster a positive, collaborative, and high-performance work environment.
  • Conduct performance evaluations, provide ongoing coaching, and handle any disciplinary actions.

Marketing & Events:

  • Develop and implement sales and marketing strategies, including promotions and special events, to attract clientele and maximize sales potential.
  • Coordinate with event planners for special functions like banquets, weddings, and conferences.

Essential Skills and Qualifications

Experience:

  • Minimum of 2-5 years of experience in a management or supervisory role within the hospitality industry, preferably in a hotel setting.
  • A degree or diploma in hospitality management, culinary arts, or a related field is often preferred.
  • Relevant certifications

Skills:

  • Leadership and Communication: Ability to clearly communicate, delegate tasks effectively, and inspire a diverse team.
  • Organizational & Problem-Solving: Strong multitasking abilities, attention to detail, and quick decision-making under pressure.
  • Customer Service: A guest-oriented and professional mindset to ensure exceptional customer satisfaction.
  • Financial Literacy: Knowledge of budgeting, cost control, inventory management software, and point-of-sale (POS) systems.
  • Industry Knowledge: In-depth understanding of food and beverage trends, supplier relations, and all applicable laws and regulations.

Important considerations

  • The FnB manager role requires 24/7 availability to handle events.
  • Providing a welcoming and positive guest experience is crucial for a hotel's reputation.
  • A good manager needs excellent communication, leadership, and problem-solving skills, in addition to expertise related to his/her role.
  • Software proficiency in MS Office, PMS like IDS, WinHMS, opera, etc
