About the Job

The Sous Chef plays a pivotal role in driving culinary excellence for our luxury catering brand. The position demands strong leadership, global culinary knowledge, refined technique, creativity, and the ability to execute high-volume, high-precision events with finesse. The Sous Chef will support the Executive Chef in menu development, R&D, event execution, kitchen operations, and team training, ensuring every dish reflects the brand's commitment to innovation, luxury, and world-class hospitality.

Key Responsibilities:

1. Culinary Excellence & Innovation

  • Assist the Executive Chef in conceptualizing, developing, and testing innovative menus across global cuisines—modern Indian, European, Asian, Mediterranean, Middle Eastern, Latin American, etc.
  • Stay updated with international culinary trends, new ingredients, plating styles, modernist techniques, and high-end restaurant standards.
  • Drive R&D initiatives for luxury small plates, live stations, tasting menus, and large-scale banqueting experiences.
  • Create seasonal menu rotations, special-event menus, and signature experiences unique to the brand.

2. Event Execution & Quality Control

  • Lead kitchen operations for high-profile weddings, corporate galas, and UHNI private events.
  • Ensure consistent taste, texture, portioning, plating, and presentation across all dishes.
  • Conduct tasting sessions, brief chefs on event menus, and maintain highest hygiene and FSSAI standards.
  • Ensure live stations and interactive counters reflect flawless craftsmanship and luxury presentation.

3. Leadership & Team Development

  • Oversee the culinary brigade during prep and service; ensure productivity, discipline, and technical excellence.
  • Train junior chefs on advanced techniques, international cuisine, and brand-specific standards.
  • Build a culture of creativity, precision, and continuous learning within the team.

4. Operational Management

  • Assist in kitchen production planning, vendor selections, and procurement of premium ingredients.
  • Monitor food costs, wastage, portion control, and inventory accuracy.
  • Maintain cleanliness, equipment upkeep, and adherence to SOPs and safety protocols.
  • Create and maintain recipe cards, batch production sheets, and plating guides.

5. Communication & Coordination

  • Communicate clearly in English with internal teams, clients (during tastings), vendors, and external partners.
  • Collaborate closely with Sales, Operations, SCM, and Service teams for seamless event execution.
  • Represent the culinary team in briefings, tastings, venue walkthroughs, and VIP interactions.

Required Skills & Competencies:

Culinary Skills

  • Strong foundation in global cuisines with expertise in at least 3–4 major categories (e.g., Indian regional, European contemporary, Asian modern, Mediterranean luxury).
  • High proficiency in modern cooking techniques—sous vide, fermentation, advanced sauce work, charcuterie, pastry basics, etc.
  • Strong command over plating aesthetics and luxury presentation standards.
  • Ability to innovate while maintaining commercial feasibility.

Soft Skills

  • Excellent communication skills in English (verbal and written).
  • Strong leadership, organization, and multitasking abilities.
  • Calm under pressure; able to handle large-scale events and tight timelines.
  • Creativity, curiosity, and hunger for continuous improvement.

Professional Requirements:

  • 5–10 years of experience in premium hotels, fine-dining restaurants, luxury catering, or international kitchens.
  • Culinary degree/diploma from a reputed institute (preferred).
  • Experience handling high-volume events or UHNI/private luxury events is an advantage.
  • Strong understanding of global food cultures and ingredient sourcing.
