THE ROLE

 

As an Executive – F&B Controls & Reporting, you'll be the bridge between restaurant teams and clean, reliable numbers. You'll run inventory audits at outlets, verify operational data, and build the cost-control reports that help restaurants actually understand where their money goes.

 

It's a hands-on role that mixes operations, auditing, and data analysis. One day you're counting stock in a bar with the bartender; the next you're spotting a variance in a report that saves a client real money. You'll work closely with chefs, bartenders, store managers, and our internal reporting team — and you'll get deep, practical exposure to how great restaurants are run.

 

You'll report to the Reporting Manager.

 

WHAT YOU'LL DO

 

- Conduct physical inventory audits at restaurant outlets — kitchen, bar, and store

- Record inventory data and reconcile it against system records

- Help maintain and update ingredient masters, recipe masters, and item databases in Baro MATS

- Collect and verify operational data: purchases, stock transfers, production entries, sales consumption

- Prepare and review cost-control reports — food cost, beverage cost, variance analysis, wastage & spoilage, menu engineering, and MIS

- Cross-check purchase records against vendor invoices and accounts-payable data

- Work with Head Chefs, Bartenders, and Store Managers to understand workflows and keep reporting accurate

- Spot discrepancies in stock or operational records and escalate when needed

- Run revenue-leakage checks on POS data — NC and complimentary bills, discount approvals, cancelled/modified KOTs, altered bills, and unusual patterns

- Suggest process improvements that help clients cut wastage and tighten inventory control

- Support the internal reporting team on client MIS reports and keep clean documentation throughout

 

WHO YOU ARE

 

- Diploma or degree in Hotel Management, Hospitality Management, or a related field

- 1–4 years in restaurants, hospitality operations, inventory control, or a similar role

- Comfortable on a restaurant floor — kitchen, bar, and store processes don't intimidate you

- Familiar with common ingredients, liquor brands, and restaurant purchasing practices

- At ease with data, spreadsheets, and operational reports

- Sharp eye for detail — you notice when a number doesn't add up

- Easy to talk to; you can work with chefs, managers, and floor staff without friction

- Organised and dependable across multiple client locations

- Fluent in spoken and written English

- Prior experience in F&B cost control or inventory auditing

- Hands-on time with restaurant inventory or POS systems

- Strong Excel / data-analysis skills

- A working understanding of food-cost and beverage-cost reporting
