We are seeking a highly skilled Italian Executive Chef to lead the culinary operations for a new premium Italian restaurant opening in Mumbai. The ideal candidate will bring authentic Italian expertise, strong leadership skills, and deep knowledge of rustic Italian cuisine.
Key Responsibilities
- Lead the full kitchen operation, including menu development, costing, kitchen setup, and team recruitment.
- Create an authentic rustic Italian menu showcasing regional flavors and high-quality ingredients.
- Maintain consistency, creativity, and excellence in all dishes served.
- Work closely with management on food costing, supplier sourcing (local & international), and kitchen standards.
- Train, guide, and mentor the culinary team to ensure top-quality execution.
- Ensure all hygiene, safety, and compliance standards are strictly followed.
- Oversee quality control, portioning, and overall culinary performance.
Requirements
- Proven experience as an Executive Chef or Head Chef in a standalone Italian restaurant.
- Must have prior experience working in Italy, ideally in restaurants similar to Scalini or other premium Italian dining establishments.
- Expertise in rustic Italian cuisine (handmade pasta, wood-fired dishes, regional Italian classics).
- Strong leadership, communication, and kitchen management skills.
- Ability to work in a fast-paced pre-opening environment, from concept to launch.
- Passion for authenticity, fresh ingredients, and culinary innovation.
Preferred Qualifications
- Experience with restaurant pre-openings.
- Exposure to Michelin-recognised or critically acclaimed Italian restaurants (added advantage).
- Ability to train multicultural teams.
