Company Description Crowne Plaza Kochi is a premium international hotel located on the NH 47 Bypass, offering convenient access to the airport, central business district, Fort Kochi, backwaters, and nearby beaches. The hotel features 269 spacious rooms and suites with panoramic views of the backwaters and the city.

Role Description This is a full-time, on-site Demi Chef De Partie (South Indian) role based at Crowne Plaza Kochi. The Demi Chef De Partie will support the South Indian kitchen section, preparing and cooking high-quality South Indian dishes in line with brand standards and guest expectations. Responsibilities include assisting in menu execution, maintaining mise en place, ensuring consistent taste and presentation, and following standard recipes. The role involves monitoring food quality and portion control, managing storage and labeling, and minimizing wastage in line with cost and hygiene standards. The Demi Chef De Partie will also help guide junior team members, coordinate with other kitchen sections during busy service periods, and ensure compliance with food safety, sanitation, and occupational health and safety guidelines.

Qualifications

  • Strong skills in South Indian cuisine preparation, including traditional dishes, regional flavors, and modern presentations.
  • Experience with professional kitchen operations, including mise en place, line service, and coordination with other sections.
  • Sound knowledge of food safety, hygiene standards, and HACCP practices in a hotel or restaurant kitchen.
  • Ability to follow standard recipes, maintain consistency in taste and presentation, and manage portion control.
  • Team-oriented approach with effective communication skills and the ability to support and mentor junior kitchen staff.
  • Previous experience in a similar role in a hotel or reputable restaurant, ideally within an international brand.
  • Culinary diploma or formal chef training preferred; equivalent hands-on experience in South Indian cuisine will be considered.
  • Flexibility to work shifts, weekends, and holidays as required in a 24/7 hospitality environment.
