Job Title: Food Technologist

Role Overview

  • Food Technologist with strong expertise in food enzymology, dairy technology, process

flavours and spray drying to lead development and scale-up of modified dairy systems and process flavours.

  • The role will involve working closely with both the flavour production and R&D teams to develop and optimize in-house flavour ingredients and process flavours and then create standardized processes to scale them up to production volumes.
  • The primary focus will be on enzyme-modified dairy with a secondary focus on Maillards and solvent extraction.

Candidates with experience in flavor houses, dairy processing, and processed food manufacturing will be preferred.

Key Responsibilities

• Apply knowledge of dairy processing and enzymology to support development of fermented and enzyme-modified dairy products

• Design and execute structured experiments to test process flavour recipes

• Conduct end-to-end pilot-scale trials involving processes such as sterilization, homogenization, spray-drying, dry-blending and packaging

• Maintain detailed documentation of experimental trials and develop SOPs for production

• Work with flavour R&D on customizing process flavours as per their requirement and optimize cost-performance

• Work with flavour production to scale production volumes while delivering consistent quality

• Conduct sensory evaluation of trial samples

• Investigate quality deviations or batch failures to identify root causes and suggest corrective measures

• Conduct research on novel ingredients that meet business needs

Key Skills & Expertise

• Strong conceptual understanding and extensive hands-on experience of food enzymology

• Extensive hands-on experience with dairy science and dairy processing technologies such as homogenization, emulsions, cream separation, butter/ghee making, cheese making, fermentation, spray drying, and cold chain

• Hands-on experience with Maillard reactions and/or other process flavours

• Hands-on experience with solvent extraction

• Experience with regulatory requirements including food safety, hygiene, shelf-life testing, traceability, and documentation

• Experience with experimental design and documentation best practices

• Experience with scale-up and translating laboratory results into pilot-scale trials

Qualifications

• Bachelor's or Master's degree in Dairy Technology, Food Technology, Food Science, Food Chemistry, or Dairy Science

• 3+ years of experience in dairy processing, flavour R&D or processed food R&D, particularly in pilot-plantoperations or scale-up
