Job Title: Commis I / Commis II – Indian Cuisine (Hot Kitchen)
Location: Tertiary Care Hospital, Karunagapalli, Kollam, Kerala
Department: Patient Kitchen & Cafeteria (Cibus Soul)
Role Summary: We are looking for a skilled Commis I / Commis II – Indian Cuisine (Hot Kitchen) to support and execute daily food production at the hospital kitchen and cafeteria. The role involves preparing high-quality, hygienic, and consistent meals for patients, hospital staff, and attendants, with a strong focus on non-vegetarian Indian dishes.
Key Responsibilities:
- Prepare and cook a variety of dishes including Biryani, Chicken Gravy/Fry, Mutton Gravy, Fish Fry, and other Indian hot kitchen items
- Ensure consistency in taste, portioning, and presentation across all meals
- Support daily kitchen operations including preparation, cooking, and service
- Maintain strict hygiene and food safety standards as per hospital protocols
- Handle bulk cooking efficiently for high-volume service
- Assist in inventory management and minimize wastage
- Coordinate with senior chefs and kitchen team for smooth operations
- Ensure timely preparation and service for patient meals and cafeteria orders
Key Requirements:
- 2–5 years of experience in Indian hot kitchen, preferably in institutional / hospital / large kitchen setups
- Hands-on expertise in non-vegetarian Indian cuisine
- Ability to manage bulk cooking while maintaining quality
- Good understanding of food safety and hygiene practices
- Team player with ability to work in a fast-paced environment
- Willingness to work in shifts
Preferred:
- Experience in hospital or industrial catering setups
- Basic understanding of patient dietary requirements
