About the Company
MIT ADT University is seeking a highly qualified Chief Manager / Senior Manager – Food Safety to oversee our extensive dining operations. With a student population of approximately 17,000, including over 4,500 residents, the university operates high-volume mess facilities across three major campus locations. The successful candidate will serve as the primary operational link between mess managers, caterers, and the university administration to ensure the highest standards of hygiene, nutrition, and food safety.
About the Role
The Chief Manager / Senior Manager – Food Safety will be responsible for overseeing food quality and safety, operational management, and staff training within the university's dining operations.
Responsibilities
Food Quality & Safety Monitoring
- Regulatory Compliance: Ensure 100% adherence to FSSAI guidelines.
- FSMS Development: Establish and maintain robust Food Safety Management Systems (FSMS) in central kitchens and distribution units.
- Risk Mitigation: Identify and mitigate hazards related to temperature control, pest control, and contamination.
- Ingredient Verification: Verify that raw materials from vendors meet established quality standards.
- Feedback Management: Address and handle student feedback or complaints regarding food quality.
Operational Management
- Daily Inspections: Conduct rigorous inspections of kitchens, raw materials, and prepared food before service.
- Menu Adherence: Ensure that approved weekly and monthly mess menus are followed strictly.
- Staff Supervision: Oversee all mess staff, ensuring they adhere to professional standards, including wearing uniforms, gloves, and caps.
- Infrastructure & Hygiene: Maintain cleanliness and functionality of dining halls and kitchens.
- Technical Monitoring: Perform regular temperature checks (e.g., hot holding) and collect food samples for laboratory testing when necessary.
Leadership & Training
- Staff Development: Provide food safety training and mentorship to the mess team.
- Safety Culture: Promote a culture of safety through FOSTAC (Food Safety Training and Certification) and GMP (Good Manufacturing Practices).
Qualifications
Educational Qualifications
- Essential: Bachelor's or Master's Degree in Hotel Management & Catering Technology, Food Technology, or Culinary Arts.
- Desirable: Advanced degree in Food Technology with a sound knowledge of Culinary Arts.
Required Skills
Experience Requirements
- Minimum Experience: At least 10 years of experience in managing large-scale messes, cafeterias, hostels, or hotel kitchens.
- High-Volume Expertise: Proven experience managing catering for volumes of 5,000+ people.
- Sector Specific: Previous experience in residential schools or educational institutions is highly valued.
Key Skills & Certifications
- Certifications: Deep knowledge of health and hygiene standards, specifically FSSAI Certification.
- Leadership: Demonstrated ability to lead a diverse team of cooks, supervisors, and support staff.
- Technical Proficiency: Competent in MS Office (Excel, PowerPoint), Tally, and general computer operations.
