As a Chef de Partie (CDP), you will oversee your section, prepare signature dishes, and ensure exceptional quality, taste, and presentation throughout service.
Key Responsibilities
- Prepare, cook, and present Peruvian and South American Latin dishes according to RIKO's standards.
- Manage your assigned section with efficiency, accuracy, and strong attention to detail.
- Make sure all your ingredients are prepared and your work area is ready before cooking starts
- Maintain consistent flavor profiles, presentation, and portion control.
- Follow strict food hygiene, safety, and cleaning procedures.
- Coordinate with the Sous Chef and Head Chef for smooth kitchen operations.
- Monitor ingredient usage, assist in stock control, and help minimize waste.
- Support and mentor junior staff within your section when needed.
- Contribute to new menu ideas inspired by Latin American and Peruvian culinary traditions.
Requirements
- 35 years of professional kitchen experience, preferably in Peruvian, Latin, or South American cuisine.
- Ability to manage a section independently with confidence.
- Strong understanding of food safety, kitchen organization, and hygiene standards.
- Positive attitude, teamwork mindset, and willingness to learn and innovate.
- Ability to work under pressure and flexible shift timings.
- Culinary certification or relevant training is an advantage.
