Role Description

A Chef de Partie (CDP), also known as a station chef or line cook, is responsible for managing a specific section of the kitchen, like the sauce section or pastry section, and ensuring the quality and consistency of dishes within that area. They oversee junior staff, manage inventory, and maintain food safety and hygiene standards.

  • Supervising and Training Staff:
  • CDPs guide and train junior chefs, such as commis chefs, ensuring they work efficiently and maintain high standards.
  • Preparing and Cooking Dishes:
  • They are responsible for preparing and cooking dishes according to the menu, ensuring consistent quality and presentation.
  • Maintaining Food Hygiene and Safety:
  • CDPs adhere to strict food hygiene and safety guidelines, including proper storage of ingredients and maintaining a clean work area.
  • Managing Inventory and Ordering Supplies:
  • They monitor inventory, order necessary supplies, and ensure the section is well-stocked.
  • Problem-Solving and Decision-Making:
  • CDPs handle on-the-spot challenges like ingredient shortages or equipment malfunctions.
  • Collaboration:
  • They work with other kitchen staff, including Sous Chefs and line cooks, to ensure smooth service.
  • Quality Control:
  • CDPs ensure dishes meet the kitchen's standards for taste, presentation, and portion control.

Qualifications

  • Food Preparation and Cooking skills
  • Hygiene standards and Culinary Skills
  • Strong Communication abilities
  • Experience in Continental cuisine is a plus
  • Ability to work in a fast-paced kitchen environment
  • Professional culinary certification or diploma
