Overview
The CDP manages a kitchen section and ensures consistent execution of dishes across the Latin caf and
night-time speakeasy menus.
Key Responsibilities
Execute dishes for Crudos, Ensalada, Bocaditos, Sandwiches, Fideos, Arroz, Desserts.
Ensure experience in Latin American techniques.
Maintain consistency in seasoning, preparation, and plating.
Manage mise-en-place, prep lists, and station readiness.
Support smooth service from day to evening.
Follow all recipes, SOPs, and plating guides.
Maintain hygiene, sanitation, and food safety.
Support the Sous Chef during service.
Guide DCDPs and Commis.
Maintain par levels and proper stock rotation.
Skills & Qualifications
35 years of experience in Latin American or global kitchens.
Ability to run a section independently.
Strong knife skills and station organisation.
Good communication, teamwork, and discipline.
Understanding of hygiene and food safety standards.
