Role Description
This is a full-time on-site role located in Bangalore. We are seeking an innovative and detail-oriented Bakery Applications Scientist - Ingredients with 3 - 7 years of experience in nutraceutical or functional food products. The role focuses on developing, improving, and ensuring quality standards of cookies, cakes, and other baked products enriched with health/nutraceutical ingredients.
Responsibilities;
• Develop and optimize bakery formulations (cookies, cakes, muffins, etc.) with nutraceutical ingredients such as fibers, proteins, vitamins, and functional additives.
• Conduct trials for new product development (NPD), ensuring taste, texture, and nutritional balance.
• Research and implement innovative baking technologies and health-friendly ingredient substitutions (e.g., sugar replacers, fat replacers, gluten-free blends).
• Ensure compliance with FSSAI, HACCP, GMP, and other regulatory/quality standards.
• Monitor raw material quality, shelf-life studies, and product stability.
• Collaborate with QA, Production, and Marketing teams to deliver market-ready products.
• Maintain proper documentation of trials, formulations, and production processes.
Provide technical support during scale-up from lab trials to commercial production.
• Continuously monitor industry trends and recommend product innovations.
Qualifications
• Bachelor's/Master's in Food Technology / Bakery Science / Food & Nutrition.
• 3–7 years of hands-on experience in bakery applications, preferably nutraceutical/functional foods.
• Strong knowledge of bakery processes, ingredient functionality, and nutraceutical ingredient incorporation.
• Familiarity with food safety, FSSAI regulations, and shelf-life testing.
• Analytical and creative mindset for product innovation.
• Good communication, documentation, and cross-functional collaboration skills.
