Assistant Restaurant Manager

FIENO, Churchgate Hospitality's new Italian restaurant opening in Colaba, Mumbai, is designed as a refined, ingredientdriven dining experience inspired by modern Italian sensibilities. To help shape our service culture from day one, we are hiring an Assistant Restaurant Manager with a background in premium / starcategory restaurants and a strong command of wine and beverage service.

The Assistant Restaurant Manager will support the Restaurant Manager in leading daytoday operations, elevating guest experience, and building a service culture rooted in warmth, precision, and Italian hospitality. This role is ideal for someone who thrives in hightouch environments and brings both operational discipline and a passion for food & wine.

• Oversee daily floor operations, ensuring smooth service across lunch and dinner shifts.
• Uphold FIENO's service standards with a focus on guest delight, table-side finesse, and experiential storytelling.
• Lead, train, and mentor the service team on sequence of service, wine etiquette, and Italian dining nuances.
• Support beverage program execution, including wine list presentation, pairings, and cellar management.
• Handle guest feedback with maturity and ownership, ensuring quick resolution and memorable recovery.
• Coordinate with the culinary team for menu briefings, specials, and service alignment.
• Manage reservations, table allocations, and VIP guest handling.
• Assist with inventory, billing oversight, compliance, and operational reporting.

• Experience in premium standalone restaurants or 5star hotels.
• Strong knowledge of wine, Italian varietals, and beverage service; certifications such as WSET or Court of Master Sommeliers are a strong advantage.
• Confident, polished communication and guestinteraction skills.
• Ability to lead teams with empathy, discipline, and a commitment to excellence.
• Passion for Italian cuisine, hospitality culture, and refined service.
