Role Description
- Develop innovative natural ice cream flavours using premium ingredients.
- Curate seasonal product lines inspired by Italian gelato traditions and local flavours.
- Conduct recipe development, testing, and sensory evaluation.
- Maintain quality control and ensure flavour consistency across batches.
- Source natural, clean-label ingredients (herbs, florals, superfoods, authentic Italian flavours).
- Collaborate on menu innovation and limited-edition creations.
- Ensure HACCP, FSSAI, and food safety compliance.
- Train and mentor junior production staff.
Qualifications
- 36 years of experience in artisan ice cream, gelato, or frozen dessert creation.
- Strong understanding of natural flavor pairing, emulsification, and texture science.
- Experience with batch freezers, pasteurizers, and churning equipment.
- Knowledge of plant-based, dairy-free, and classic ice cream bases.
- Valid Food Handler Certificate.
- Passion for clean-label, natural ingredients.
- Culinary degree in Food Science, Pastry Arts, or related field.
- Experience with Italian gelato techniques.
- Portfolio of original ice cream creations.
- Knowledge of Indian and international flavor profiles.
- Innovation mindset with an eye for trends.
